Turnip juice (salgam suyu) is a very popular Turkish beverage from southern Turkey. It is made with the juice of red carrot pickles, salted, spiced, and flavoured with aromatic turnip fermented in barrels with the addition of ground bulgur.
Turnip juice is traditionally served cold, in large glasses with Turkish (Adana) kebab. Turnip is rich in vitamins and minerals.
